IN THE DARK while everyone was sleeping, meat and milk was delivered to Walker St.
Casino High School student Abby Brooker said she had been cooking steaks and sausages since 6.30am.
"We do it every year," she said cheerfully.
The queues of people lining up for their free Breakfast with the Butchers is an annual highlight of Beef Week in Casino.
Is there any other town that provides a free breakfast for 500 plus people?
The morning included a cow milking competition, cow pat lotto and performances from local buskers.
The celebrity round of the cow milking competition pitted Richmond Valley mayor Ernie Bennett against town crier Brenda Armfield and Richmond River Express Examiner editor Susanna Freymark.
Despite Beef Week committee member Frank McKey giving Ms Freymark a helping hand, Mr Bennett won easily.
"I've done it before," he said. Born and bred in Casino, a young Ernie rode his horse four kilometres to milk forty cows at a nearby farm.
"It took a few hours to milk them," he said.
The mayor had the advantage.
Beef Week celebration reach fever pitch tomorrow with the street parade, wood chainsaw art, the craft market, the wood-chop competition., orchid show, the pie eating competition and Mr Beef.
